I got confused by that as well and did some research. Apparently “Sasha” is a Russian nickname for Alexander/Alexandra.

Roadhog is not his real name
Symmetra is not her real name
Doomfist is not his real name
Wrecking Ball is not his real name
Reaper is not his real name
I can go on. Maybe there are a few that use their real names (I know Moira at least) and Omnic Characters have designations that will be too cumbersome to say (OR-15, E-54, whatever Zenyatta is)
But it was never said the names we know are their real names. Look at McCree.

Her full name has always been Aleksandra Zaryanova, but in-game uses the nickname/codename Zarya for short.

Zarya means “Sunrise”, so her last name probably means “New Sunrise” or alternatively “New Dawn”. Zarya also means “Morning star”. I like how she is associated with a new beginning of some sort.

The complete surname is Zaryanova. Usually the champions in the olympyc are call with surname, not with the name (in this case, alexandra/sasha used for a family situation). “Zarya” is only a nickname of her complete name of how she is famous (as champion olypics). Is for this we and cassidy call her “zarya”.
