Sounds like an idea. Let’s allow all channeled ultimates to be self- cancelled, so that goes for Whole Hog, Coalescence, Transcendence, and Death Blossom.
No need to have a sense of risk of counterplay when you can just cancel them.

usually to clear out a squishy or two very quickly from behind. your jets are super quiet
also using map geometry to not get shot is kind of pharah’s number one thing.

Coalescence and DB have self heal. Whole hog lets you move and is on a tank. Coalescene lets you move FASTER than usual
DB allows you to atleast duck and jump to maybe avoid SOME shots
Barrage planks you as a stationary target in the air that CANNOT move, iseasy to kill and unless casted at ideal range doesnt have the burst

Oh trust me it would make a big difference.
She remains stationary in the air for 3 long seconds. Most times you get what you want within the first 2 seconds, but you have to stay still watching your own death helpless.
It’s a sad way to go specially because it’s caused by your own final ability.

Take it from a high Diamond low Masters Pharah then when I say that players have the ability to turn around mid ult and take you out even if you did flank.
On paper you’re right, in practice there’s many more variables.

Non Pharah players don’t know the pain of not being at that perfect 20 to 25 foot range cone downwards angle no more than 10 feet above ground requirement…
Ive solo barraged Mercies alone many times but I was a little off in either of these numbers mentioned and they killed me
I usually solo barrage and my target is instantly dead so for 2.9 more seconds I just spin around wildly like an idiot because I can’t do anything else and I pray I don’t die to a random Lucio holding M1 at my perfectly frozen head 
Man…the amount of times I’ve solo barraged a Hanzo but I was barely a little far away so he 180d and shot a single wooden arrow and I lost the duel…feels so bad

Anecdotal, but it’s a factor for sure, and has happened to me . Pharah might have the highest damage output of any ult, but that doesn’t mean it’ll be successful lol.
To sound like a broken record, barrage is the worst ult in the game and should be looked at.

Why should pharah be able to cancel her ult when nobody else can? Use your ult better, or be punished for bad play.
Mcree and junkrat dont technically cancel their ults, they can just end them quickly for zero gain.
Not even a pharah player, but have flexed at her a lot. I usually ult if I can take out the 2 healers and my death wouldnt matter at the point or ult already crowd controlled enemies. Her ult feels more worthless than Death Blossom, and thats a record

And also has the highest total damage potential of any channeled ult in the game at over 2000 damage. Meteor Strike, Coalescence, Dragonblade, Death Blossom, and more don’t even come close to half as much.
