Key to neutering a genji is being aware of his mode, i suggest you to play genji a bit to know how genji brain functions, think of them as hyenas, they dont actually have the firepower to take you on directly, they are always scouting sniffing for blood, they strike when you have taken dmg from their or their teamates poke or at a disadvantage, or if they think you are easy prey like zen or ana.
Now essential qualification to kill genji as a hitscan:
You need decent aim, decent aim in the sense you should be able to hit shots when ever he jumps.
First when you notice a genji on enemy team see if he thinks you are his target generally if you are ana then never allow him to get to you with full hp land a couple shots before he reaches you. the key as support is not to kill him but waste his engage and drag it out.
use something like a pillar or cover and play ringa ringa roses.
people often say others dont peel, but often its case of you not buying enough time for peel to come.
Also the general tips like play closer to your team but still have some natural cover to play the hide and seek.
Save your cds like helix and sleep nade for the genji engage.
The other key thing is to shoot him when he is going after your teammate this is the best time to kill him or chase the genji away.
Basically a good genji’s play style is being a scum he will never give you a fair engage, he will always descend on you at the worst possible moment.
But he doesnt have a lot of time to be there unlike tracer. So waste his time make it as annoying as possible for him to kill you.
He’s easier to hit while he’s at the peak of his double jump due his very predictable trajectory at that point.
Shoot short bursts, weak shots or miss on purpose to bait out his deflect.
As Ana, her melee animation is similar to her sleep dart, so you can use it to potentially bait out the Genji’s deflect. But what is always good is to throw nade at your feet when the Genji dashes into you. At best, you’ll heal yourself form the dash/melee damage and anti him, and at worst you’ll at least heal yourself, making it harder for the Genji to finish you off.
Genji is a strong dueling hero if he is able to choose a fight you will lose.
Positioning and awareness can shut down almost all genjis mid fight, it’s hard to explain but if your with your team or outside of his dash range it’s very hard for him to do anything.

Ana you should be almost kill able with nad unless your out of position massivly. so always think when you nad will Genji likely be able to duel you well.
76 you can play around rockets and heal but best thing ya can do is run if he wastes cooldowns and stuff to kill you and gets nothing it’s worse for him. 76 mid game is strong if you keep denying Genji what little value he can get he becomes an ultimate bot which isn’t always enough to win games unless you have feeding tanks.

can’t hit a genji with torbs primary fire, its impossible, and i know because i play hundreds of hours of torb
if you can hack him, which you never can, because he acts like a coward and sits smack in the middle of his team until he gets blade then deletes your team
pressure him into using his deflect if you are playing soldier. after genji uses it, you are free to helix him and get more shots in. if you play ana, wait for him to dash in or flank you and then nade the ground. genjis usually want to run away at that point. if you are really having trouble just ask for someone with cc to peel for you. characters with stuns are inherently good against genji too
if you engage a genji at medium range as soldier, you can and should win the duel.
you force deflect, drop your heal, keep putting bullets in his face. rocket his feet after double jumps.
