I get a lot of lag when the game put me on the AMS1 server, it often just disconnect me from the lobby or even game. Is there a way to disable the AMS1 or to make it a bit more stable?

There is currently no game setting for disabling specific servers.
So what am I supposed to do?
I’ve seen people blocking some servers on their firewall, but I don’t know what to block to block AMS1 because that server is just unplayable for me.

I recommend posting a connection test on the EU forum, as the staff in that region may know more about the situation. You could also open a ticket with the staff to track down where the problem is happening between you and that server.
I highly recommend against this. Blizzard servers use a list of IPs that they cycle through, so you’d never have all of them blocked for AMS. Plus, it could cause failure to connect errors in Competitive matches, causing lost SR which would not be reimbursed.
