What am I getting out of it?
Why not just keep farming NM Dungeon Tier 31-35 for at least best Unique drop chance?

There is LITERALLY no reason … besides being able to say that you can clear them. You have the same chance of getting BiS loot at lvl 75 from random mobs out in the world.
No, you want to farm Tier 31-35 NM dungeons.
The monsters are level 85 there (Minimum monster level to drop Top Tier Uniques).
NM dungeons also increase chance of Unique drops.
lvl 14-15 glyph takes 4-5, tier 40 sigil. start the math from there, idk. it seems it doesn’t give much exp + continues sigil run will probably cause brain hemorrhaging at some point. 
you get more glyph xp, but other than that idk you tell me? you’re the one picking the level.
I did a 51 for the 50 achievement. Took it fairly slow but made it through fine. See the next achievement isn’t until NM 75. Not sure it is worth the hassle at the moment. Did a 53 with some dicey affixes and I got through just barely. I am just farming the 40ish ones at the moment to level my glyphs. Maybe eventually I’ll tackle the higher level NM stuff.

- actually needing to play the game instead of just 1-shotting everything and being able to ignore mechanics, actually getting to see my build donuts thing ect ect.
If you want to play the game on mega easy mode it’s your choice but I find that boring as hell.
I’m not against better rewards for harder content tho.
It’s nice having ancestrals be the vast majority of my drops now that I’m beginning the push into low T70s
