My Rogue is melee and uses no bow skills. I know the dmg on bows is meaningless but the stats do count and you can put a melee aspect on the bow for the 2h 2x multiplier. Am I still able to also put aspects on my melee weapons and they all count? Does Rogue just get more total aspects than say Sorc?
Yes, all aspects count and it is important to put what you think is strongest on the bow/crossbow slot for the 200% bonus. You also get the bonuses from the affixes even if you are not using the weapon for damage.

No problem! What build are you going for? Having aspects on the weapon(s) you’re not using early helps a ton because you don’t need to switch it out until you get a major upgrade.
Yes, you basically an extra 2H stat stick with the bow. Aspects, affixes, the whole deal just like Barb.
This is why (as a sorc main) I feel Sorc needs the 3rd enchant spot jail broken out of code purgatory.
