Cannot complete the quest because the colossus gets slayed. Then they shakes on the ground and then nothing happens. If I leave and come back, same thing happens, I’ve reset the game same thing happens

Sometimes you kill stuff too fast. I recommend trying a harder difficulty. That worked for me with a couple of Strongholds.
Had this happen to me.
Had to let it spawn, wait a couple of seconds, then kill it slowly. Ish.
