So I play on PS5 and currently don’t have a Playstation Plus subscription anymore after losing my job. My question is should I even bother playing Diablo 4 without multiplayer funcionality?
You can but any multiplayer won’t be access. When my one month gamepass on my xbox was over I found out I can still play Diablo 4 without it. To play season I need a pass to do it. It is up to you.

I only play solo myself, except for the world bosses. I only have PS+ so my kids can access my game library on their PS4.
I let my PS+ expire because we only play couch co-op since we started living together. The only reason to have PS+ for D4 is if there are people you want to group with or a clan you really want to interact with (knowing that clans have no game impact) or trading is really important to you.
You can still enjoy seasons and all the game content. You won’t miss anything.

A subscription to Game Pass (Core or Ultimate) or PlayStation Plus is not required to play a Seasonal Character. I’ve not had Game Pass (or Xbox Live Gold) since Diablo IV launched and have had no issues playing Seasonal characters.
The only thing you can’t do is chat with other people, trade with then, Party up with then, etc. You can, however, still do world bosses with random people in the world. Having other people run around the game world with you is not affected.

Apparently without PS Plus I won’t be able to do the Tormented versions of the bosses so their ARE roadblocks to progression since I imagine they can’t be soloed 
Why do you think they can’t be solo’d? They’re harder in a party, as their hp ramps up with each additional player.
It’s the impression I got through watching YouTube and the fact the bosses are 100 levels higher then my own.
I haven’t gotten there yet, but i’m sure it’s just a matter of whether your build/gear are optimized enough + skill. The only reason i can see needing a group is if you can’t solo it but someone else’s build can solo a 2-4 player boss.
