Probably because Nilcar is really annoying to solo. I feel like that’s the second-most annoying fight I’ve encountered in the game so far. (Top spot going to, of all things, a fight at the end of a random side-quest.)
Mostly, I feel like there’s the bones of a really good boss fight there, but that the arena is just a bit too small – it ends up making it feel a bit aggravating when you’ve got the Hellbinder statues from the one minion and the poison puddles from another leaving almost nowhere safe to stand or dodge, and the suppression bubble is up, meaning you must stand within that to damage any enemies inside it (including, y’know, Nilcar).
How I ended up soloing him (as a pyromancy Sorcerer in WT2, anyway) was to drink a potion that gave me extra damage against undead, then to largely just ignore the minions except the suppressor bubble. First off, burning them down meant I took attention off of Nilcar, and that would drag the fight out (and make it more likely I would eventually slip up and die). But also, if you don’t knock them out, it seems like Nilcar doesn’t revive them into the Unstoppable state.
Basically, I just kept wailing away on Nilcar, avoiding the minions where possible, though taking down suppressor bubble guy whenever that popped up. By not trying to burn down the minions, I didn’t waste time on that endless cycle of “down them, whups they’re back up, down them again”, etc.
(It was still super aggravating, though.)
But you’re right that with two people, it’s almost certainly easier; even though the arena would still be small, you’d burn Nilcar that much faster and have someone who could potentially revive you without resetting the fight if you did get downed.
