Yes, it is possible. Only take skills that can use the 2handed sword. For example, lunging strike + rend + rapture. And no, it won’t be difficult.

That means you will lose out on all those stats on those weapons (they still contribute to the overall damage) and your damage will be reduced dramatically.
Still, I’m sure it’s viable on lower world tiers. Give it a try 
You must equip all your weapon slots to be viable. If you want to only use 2H Swords, you can only take Skills that allow you to assign 2H Swords to them. There isn’t any way to hide weapons. This is a feature that has been requested quite a few times. I think the only method to make this work would be only allowing unbound weapons to be hidden. Even then, the dismount attack is always performed with a 2H Mace, so they would need to change that to allow you to assign a weapon.
This is like playing american football without a helmet. Yes, it’s possible in a physics sense, but it’s a spectacularly bad idea.
