Nothing should 1 shot you. Ever. Maybe 2 or 3 hits dead but never 1 hit and done, when you have the max armor and resistance allowed.

So when they had a stacking debuff (ie, you got hit multiple times), you also complained.

Please take the debuff out of pit bosses

They did take it out. I think you just dislike dying and learning actual mechanics.
