Decided to start using up some of my Exquisite Blood so started doing Zir runs. At one point I went 11 runs in row without a single GA dropping. Why even bother with these bosses?

I agreed with you, why we even bother with not just Zir, the ice beast and Duriel are the same , yesterday i used 2 stack of keys for Zir, 2 stack for Duriel and 2 stack for Ice Beast and no Mythic drop, some 1 GA but all trash, wasted time and materials for nothing, pretty sad thou.
they potentially trigger lesser Belial that drops husks used for Belial summoning.
I quit fighting bosses a while back…not worth the struggle…no reward.
It would have been stupid of me to keep banging my head against the wall. 
Don’t bother…just directly buy the Belial mats.

You don’t really have the choice. Every build needs Unique items and they drop almost exclusively from Bosses.
it is a shame for a seasonal game that all items are so hard to get to lose them in a new season.
the extreme NRG and the scarcity it gear and items is a great red flag.
that is why POE 2 blows Diablo out of the water
PoE2’s loot is garbage too, you have to gamba on it an hope for the best.
Otherwise they’re letting MBAs make decisions on how to get people to play longer…primarily, make loot slow and hard to get. Which just makes me and people like me finish the battlepass and maybe the seasonal journey up to whatever edgelord pet they add and call it a day.
