I cant seem to find any concrete info on this and it seems a pretty basic question.
Like will you get more loot or more greater affix chance by killing level 120 mobs vs level 100?
No, there is no threshold of getting more or better loot with a difference in monster level.
Only way to guarantee more loot is Tormented bosses, you pay 3x materials and get 5x rewards, other than that, none.

The more I learn about this game the more I hate it.

The only thing that has a higher chance of dropping is Uber Uniques from the Uber bosses. The normal Uber bosses have a slightly higher chance then normally finding a uber unique in the world, Duriel and Andariel have a slightly higher chance then those bosses.
Everything else, no extra bonuses from higher level enemies.
Monster level only affects drops once they hit level 95, which is when they drop guaranteed item power 925 gear.
Honestly, they should have the GA chance increase gradually above that. Which make progression in The Pit or NMDs feel a bit nicer.
