Should I pick and sell/salvage also white and blue items or only yellow and higher?
What should I do with those itmes at all? Sell or Salvage?

A core mechanic is missing from the game, crafting. The reason for salvaging whites and blues would be to craft new items from the materials. But the game was rushed to release it before the quarterly report to the shareholders. So crafting is missing and so there is no use for white and blue items so far.
I kid you not.

They deliberately left out crafting so that they can sell it to you via a DLC.
This games “crafting” only consists of extracting/imbueing the same aspects over and over again.
Yellow and higher.
Salvage until you have a bit of resources, then sell. Always extract the Aspect of Legendaries if you use it or Salvage them.

sorry dude u won’t find POE crafting in this game. it is pick up extract and trash it.

No reason to fill up your inventory with tons of Aspects you “might” use someday.

Did any Diablo game even have a way to do something with white or blue items? I don’t remember.
diablo 1: best in slot weapons and some gear were blue items, like ias+dmg swords.
diablo 2: runebases and craft recipes made whites for example the 4s monarch a high tier chase item
diablo 3: had an upgrade system which was too expensive to use but you had the possibility to upgrade a white item to an ancient legendary or set (also you needed a loooot of white materials to craft)
I wouldn’t extract anything that’s below the halfway range of the roll. So if the aspect says it has a range of 10-30%, anything under 20% isn’t worth spending the gold to extract.
Early game on your first character you can pick them up to salvage since you’re not getting many yellows anyway.
Then you salvage and maybe sell some yellows for awhile and stop picking up whites and blues entirely.
Then you just vendor 99% of yellows for the gold as the gold value goes way up as you level and the cost of things like re-rolling stats goes way up as well.
Keep higher item power rares (in the range that’s currently dropping for your level + difficulty) with a few useful stats at least that you can re-roll one stat on and add an aspect to.
Salvage most legendaries unless it’s a high roll of an aspect you might use or use on an alt.
You start to salvage a decent number of uniques as well later on.
