I usually run with a pet out to pick up my gold but when it picks up gold, the drops vanish. The pet is not picking them up and my character is unable to as well. If I unequip the pet, all drops remain so I can pick them up.

Go to your Altar of Rites and read the descriptions of the “Carrion” and “Husk” nodes.
Your pet is auto-salvaging all white/blue/yellow items for you.
