Last seasons it didn’t happen. I also played my non-season monk and I can run around without my resource depleting. I am using the Won Khim Lau and Vengeful Wind.
This makes the build unplayable. I run out of resource, then die immediately.

If you are running the Shenlong’s version - which drains 65 spirit every second - you’re doing more damage but spirit management is a PITA.
The only thing I can see is that your Non Season HC Monk is getting 28 extra Spirit from the two weapons as Secondary. It may also have more RCR that I cannot see.
Perhaps, last Season, your Ethereal gave you RCR.
As mentioned, Ethereal item must have granting you straight RcR% or CdR% for Epiphany to sustain your Spirit, or you had a different equipment setup at previous seasons.
At the other perspective, perhaps the damage you deal is not sufficient to be effective at the difficulty or Greater Rift tier you are playing as of right now. Try to swap from Electric Field to Northern Breeze until you have better weapons, or replace Seize the Initiative passive while farming T16 with Beacon of Ytar so you can keep up Epiphany. Also, Northern Breeze skill rune cuts the Spirit cost drastically so you wouldn’t have this issue as often as your current setup.
Usually Monks never let go off of Seize the Initiative and Beacon of Ytar passives, but while farming with a channeling spell, extra attack speed could translate into faster Spirit drain. I see both of your equipped weapons have Increased Attack Speed% affixes and that should be the main problem behind that issue. So when you replace Seize the Initiative with Beacon of Ytar, your problems about Spirit drain should disappear.
Whenever you had the opportunity of getting better weapons without IaSpd% modifiers, immediately consider taking Seize passive back in and keep Beacon paired with it. Yes, that means you may have to get rid of Guardian’s Path passive because it almost does nothing but inflate your toughness.
I’d add to that, you need an RCR roll or two, especially for the speed version. As it stands, on top of missing Beacon of Ytar, you’re missing practically every CDR roll needed for the build to increase uptime on Epiphany. Including a diamond in the helm (if you’re not using it for RCR).
You might get away with a better-rolled In Geom over Vengeful Wind as it’s only giving bonus movement speed.
Mind you, it’s been a long time since I’ve played it so my information should be taken with a bathtub of salt. I’m a fool for Inna’s when it comes to speeds.
