This might be a silly question, but once you unlock removing the item requirement at the altar everything shows as level 1. I don’t understand what is worth crafting at different levels now because it won’t tell me what level it is.
For example in the season journey I need to craft a level 70 item. How do I know what is level 70? Is there a way to still see this that I am missing?

You don’t, unfortunately.
The top option is usually the 70 item. Use that as your guide.

Top yellow item always the best quality the Blacksmith or Jewelcrafter can produce. There could be craftable green or orange items placed at the top but you’ll still want the top yellows until you acquired the right ones.
They really should have left the original item level in there. Item levels still matter for followers when leveling up so it’s really hard to craft stuff for them without wasting mats. Wouldn’t have been that hard to have the original item level in a different color or something.

It’s certainly annoying on several levels when you are just hitting 70. Like, trying to upgrade a rare to a legendary. Had non-70 stuff intermixed with the rares I was saving, so the transmutation wouldn’t work. Was just a hassle.
I mentioned this on day 1 of the PTR, but they don’t care.
Why would you waste the time and mats to craft stuff for them during levelling?
