I see that, with the sorceress class, she can specialize in three different elemental types. Would it be more resourceful to spread my point in different elements, or pick one element and concentrate on that? And if I am to concentrate on one element, would it make sense to make three separate sorceress characters, one for each element type?
Make a cold sorc, skill cold mastery, get a sundered cold charm and cruise the game.

As long as you don’t have the sundered cold charm you can skip cold immunes with teleport.
Edit: you can respec with a certain item which you have to farm or trade for. So it’s possible to try different builds if you wish.
For start, go full Blizzard. Later on, you could change it with good gear.
It’s really a matter of personal choice which element/elements you choose, although trying to spread your points over 3 elements won’t be very effective. Dual element hybrid sorcs do very well, and with the new sunder charms single element works nicely as well. Cold sorc is very overpowered right now if you get a sunder charm it’s ez mode.
Again it’s really up to you if you want to have multiple sorc toons, there are respecs in the game to change your skills if you want to try different builds, much easier than leveling multiple chars.

If you are playing ladder, there are new drops called sunder charms which make Cold sorcs very strong right now. However, until you get this charm, you are limited to really only clearing areas with no cold immunes, at least once you get into hell mode.
You can make up to 20 characters, so you can have several sorc chars with different builds if you want.
If you are looking for a rounded starter character that is cheap to gear and easy to play, even if it isn’t super strong late game, you can make a fireball sorc with a handful of points in frozen orb. this will get you through hell mode and let you farm pretty much any zone until you get geared enough to choose something else.

Personally, I’m not a big fan of planning a build which needs to skip a boatload of monsters in hell difficulty. So I’d go with a 2 tree build. You can do rather well with a nova / FO (frozen orb) build. If/when you find a cold sunder charm, you can respec to a BlizzOrb (Blizzard and FO) and faceroll everything.
But general wisdom says that a Blizzard single tree sorc is the best ladder starter.

My recommandation is based on no sander charm.
I, too, recommand a dual element.
Either hydra-frozen orb (personal favorite).
Firewall-nova.
Meteor-frozen orb.
Etc.
Don’t forget to go with a leveling build (typically nova) then respect.
Blizzard/Frozen orb dual element, both maxed out is the God mode build until better gear. At 90 you can have a max Blizzard and be roughly 3 or 4 points from a maxed orb (with points maxed in the other contributing elements).
