So I have a Jade tan Do, which does 180 poison damage over 4 seconds.
I am also using a sword that does 12 poison damage in my other hand.
I can’t find an answer to the question: What happens if two different poison damages hit?
Do they add together?
If the Jade tan Do hits first; does it ignore the weaker 12 damage?
If the 12 damage is applied second; does it override the JTD’s 130?
And, importantly; Should I switch out the off-hand, weaker poison effect?

Maybe I’m being slow but I’m still confused.
Is my poison stacking?
Is the stronger overriding the weaker (Or ignoring it if the weaker is applied second?)
It is easier to understand with the following explanation:
- Imagine you have a weapon having 25 poison damage over 1 second in one hand, and a 75 poison damage over 10 seconds in the other hand.
- You hit the mob with both weapons.
- As each second is 25 frames in D2, technically the first weapon is doing 1 poison damage in every frame (25 pdmg over 1 second = 25 pdmg over 25 frames = 1 pdmg over 1 frame) and the other weapon is doing 0.3 pdmg in every frame (75 pdmg over 10 second = 75 pdmg over 25 * 10 frames = 75 pdmg over 250 frames = 7.5 pdmg over 25 frames = 0.3 pdmg over 1 frame).
- The engine gets the higher number for each frame, so in the first 25 frames it gets 1 pdmg per frame and in the remaining 225 frames (as the second weapon still has 9 seconds left) it gets 0.3 pdmg.
- When the highest pdmg is identified for each frame, the engine calculates all the remaining bonuses/debuffs (resistances, - posing resist, etc) to get the final pdmg that will be applied in the given frames.
Ah, ok. So it will apply both. I’m not misusing Jade Tan Do or otherwise erasing it’s pdamage by having a weaker pdamage weapon in my off-hand.
No, it is not applying both! It is applying the highest one for the given frame! Read my explanation again! 
Jade tan Do: 180 pdmg over 4 seconds = 180 over 4 * 25 frames = 180 over 100 frames = 1.8 pdmg over 1 frame.
Sword that does 12 poison damage: this needs the “over x” part to be able to calculate how much pdmg does it do in each frame.

Oh! So if the Jade Tan Do is higher pdamage per frame, it will ignore the offhand.
But if the offhand is higher pdamage per frame, it will apply this instead.
But the Jade Tan Do, having a longer application time (4 seconds to the off-hand’s 3), will kick in for 1 second after the off-hand runs out (provided they are applied on the same hit)?
So, basically, they are both applied for their durations, but only the one with the stronger damage-per-frame actually ticks?
Edit: It should be noted I’m using Double Swing, so I’m going on the assumption both attacks hit the same monster.
It does not matter how many different sources of poison damage you apply. You can apply a million different ones, yes all start at the same time, but in the given frame only the highest damage will be applied.
In your actual example, 12 pdmg over 3 seconds = 12 pdmg over 3 * 25 frames = 12 pdmg over 75 frames = 0.16 pdmg over 1 frame. So, Jade Tan Do will always have higher pdmg over 1 frame, plus it has a longer duration, so basically your sword’s pdmg is never truly applied. It also starts kicking in, but in each frame it has lower pdmg than Jade’s, so its damage will never be used.

Double-Swing enough to make it free and then everything into Find Item.
This is my Magic Find Barb. I’m feeding him MF gear and better armor so he’s not squished by not having much offensively.
Is JTD really a useful weapon on any classes? Or is it like a low level character and you dont have gear for Normal+ difficulty? I am only asking this, because the only posion damage I would ever consider is the Necro’s poison and the Amazon’s posion. Even Rabies is questionable afaIk.
This. I don’t have much in the way of good weapons yet.
In this case I’d say it is good that now you have the explanation how pdmg is calculated, but gear-wise try to find a better option and move on. 
Yeah. I’ve jumped onto my higher-level toon (Still in Normal, but in Act 5) and I’m going to gamble on War Swords or better.
If by gambling you mean just move on to nightmare and hell and find proper gear there, its fine.
Gambling is my last option when I am truly desperate and unlucky to find anything useful. Like in this season when I am doing SSF and could not find any belt 'til Hell, so I had to gamble a few to get some res/life/mana, because my gear-luck was a joke. 
Higher toon is for playing through the season with a friend. 
Not beating the game until they wake up and we beat it together.
When we can’t play together, I jump on my MFind Barb.

Following this logic your MF barb will always be on the same difficulty or even behind your main char, if your goal is that your main should reach hell’s end first. So it feels like a bit pointless to have a MF barb waiting for other chars. Also, if you dont share gear for your main toon, you can still play with other chars alone and not sharing its wealth with other of your chars.
I think you have it backwards; my MF Barb is the one I am playing solo. So it can pass my main toon.
My main toon is my ‘Only with friend’, so whenever I’m not playing with my friend, I’m playing on my MF Barb.
So, eventually, my MF barb will pass my main toon and beat the game. My ‘Friend Toon’ will only beat it with my friend.
