So I’m wondering if I create an iron golem that’s skill level 1 do the stats increase when I add points to the skill or does the golem need to be re created to gain stats?
Need to be re-created.
Same works for all minions.
For example, if you play summoner necro, you can stack as much +skills as possible on weapon/shield slot (ignoring all other stats), summon your skeles and then swap to your main weapon/shield which contains the stats you need (MF, res, etc.).
