Opened up the Blizzard app after update, clicked play now for WoW and eventually had a screen pop up asking me to pick a server. I went down to my main server and clicked on it and the screen stayed black and none of my toons were showing. WTF?

You are not the only one missing characters or having char list display issues.
They are aware and are working on it. Please follow the WoW TS Support Forums where Staff are replying and talking about it
P.S. This particular forum is for issues getting the older Blizzard games like Diablo 2 working, not actual modern current game issues. It is important to direct folks to the forums where the team responsible for the issues is actually replying
