How does your elf toon react to being in Silvermoon? I mean any elf. Blood, Night, void, Nightborne.
How do they feel about being dragged into this? Especially so suddenly? How are they about the changes to the city, and the current situation?

Mostly by not playing Retail. The lore really got kinda borked from Cataclysm on.
I have a few Elves who would canonically participate in the defense of Silvermoon but I haven’t put much into developing their part in it for a variety of reasons. There are still characters of mine, Elves or otherwise, who’ve been greatly affected by the current conflict, however. Several of my Mage characters are part of, or associated with, an organization called the Lightriver Synod, founded and directed by one of my Night Elf Mages, Keermiel Lightriver, who’ll ultimately be the focus here. Their major struggles actually started with the events of TWW, as the destruction of Dalaran left Keermiel homeless, among other less relevant things. The Synod has since been trying to return to normalcy, with the final and most challenging task being the reclamation of Keermiel’s ancestral estate, intended to be her new home.
The situation in Silvermoon placed a lot of stress on an already daunting task, since several members and collaborators are Thalassian. I imagine this affects Keermiel the most, having to deal with homelessness on top of what is essentially an invisible war in Desolace against a tribe of Naga led by her mother; and now lacking precious allies needed not only to secure the sight of her new/old home but to also dredge it from the sea to be restored to a livable state.
She has remained stable despite all the stress and has reluctantly taken to trying to use the situation to try to infiltrate the Silvermoon court in an attempt to convince the local nobles into providing financial support for a tangentially related project, while her peers help her accrue clout.
Her time in the city itself is relatively limited, with much of it being among her Thalassian and Shalassian associates, the Academy in the city, or more rarely a noble’s private abode. The experience has had its lighter moments, especially since it now largely consists of drinking wine at Lord Saltheril’s estate in a fashion that is largely nostalgic. The stress and anxiety of failing to secure the support she seeks or losing what little she has gained back in Kalimdor remain as constants in her mind, and the conflict against the Void adds to them, both as competition for her targets’ attention and more generally as the broad spectrum threat the Void poses. The personal concerns of Silvermoon and its people are only close enough to her to give her what she needs to convincingly pretend to care. As dire as it may seem, she can’t help but view it more as a roadblock to her own goals; another in a long line of hindrances that stifle the pursuits of her organization year after year. It will eventually pass having suppressed progress for scholars the world over, just as the others have.

IF I played a belf (which I would never do because their laughter is like nails on a chalkboard to me) I’d be making sweet treats for the soldiers

So all my Horde elves, (4 BE, 4 NB, 1 Undead) all having varied degrees of the same opinion - if the Sunwell wasnt exploding every NE, HE, and VE should be detained, tarred and feathered, jailed, or executed. My one NE aint touching all that with a 10ft pole, thats a them problem.
My BE probably being the most extreme - the Sunwell needs to be defended with every ounce of power we have and doesnt care who we need to sacrifice. After that, however, the entirety of the High Elves and Void Elves should be round up and put down as traitors since most of this was probably their fault anyway. He has a deep unease and anger towards any blue eyed and purple skinned elf running around Quel’thalas. He hasnt forgiven or forgotten. He accepted their presence when the Sunwell was all voidy, and has allowed some grace in the aftermath, but every day is close to just taking one out back and claiming they were a cultist all along. Night Elves dont get as severe of a treatment, but not too far behind.
Those on the other side of the spectrum generally equally have a strong desire to defend the Sunwell if they’re around the city and are in some sort of military role but have unease quiet unease about the non-BEs & NB being there. They’d have some thoughts as to why some of their leadership was been so easily forgiven and have not been detained, tried, or otherwise made to make the Blood Elves whole (compensation of some sort). Its not my NB Leyweaver or Athropologists place to get into the deep politics of the BEs, just that their allies and cousins must have something to say about this.

Linwrel is glad to help in the defense of his people and their land. That said, he’s not really sure how he feels about the restored Silvermoon. His family’s home was destroyed completely in the Scourge invasion, and his home has been various barracks, inns, and tents ever since. Ever since Quel’danas was purified and the Dawnwell created, he’s felt more and more restless. He looks around the city and isn’t sure he sees home anymore. He looks at the Dawnwell and no longer feels like this is his people’s place.
His palms are starting to itch.
It’s going to be time to leave again soon.
After the Dawnwell narrative, my Blood elf’s reaction is … Depressive self-harm.
I’ve been playing my warlock now too, after they F’d the lore of the lore of the light and used its guts as a plaything – all the while constantly glazing the void as a more helpful & beneficial power to the overall cause at large, while the light is "Just as evil – if not MORE evil!" than literal F’ing demons and the eldritch void.
… Although even that class from a RP perspective feels off, as my warlock’s lore feels undermined as well, with the light and just about every other damn power-fantasy being "Just as taboo and edgy!" as their supposedly-uniquely-taboo powers warlocks tend to utilise … 
Man, Blizzard has really F’d up the class-fantasy in this game on a disgusting scale by catering to the morons BlueSky fan-fictions that honestly don’t care about the established world-building or original fundamental lore pillars.
Overall?
I’m not surprised people who care about good storytelling are moving away from retail and going to Classic or looking towards World of Warcraft Forever — or even moving away from WoW entirely & going towards Diablo.
Now don’t get me wrong, there’s been enjoyable aspects too! 
For sure … But this game’s (retail) world-building, lore, passionate identities and awe-inspiring aesthetics are but a shadow of what it all once was
