I think you might be falling victim to the echo chamber effect. People tend to seek out and surround themselves with similar opinions and ideas because they feel comfortable.
In your case everything you like about vanilla you assume the wow community as a whole will also embrace. Historically this has proven to be false as blizzard learned post WOTLK and early cata.
While many on the classic wow forums or those you talk to in real life might be enthused by it, the bulk of players and potential players tend not to like challenge or delayed gratification.
