Either the “one true timeline” is actually a thing in WoW, which implies predestination ; so history is already written by some all-powerful cosmic entity, and for some weird reason, we must abide by that “true course of events” and any deviation from it is deemed undesirable. But logically, in a universe in which alternate realities are part of the setting’s metaphysics, deviation from the “canon course of events” would merely generate another timeline (history starting to diverge from our own on the moment said deviation occurs), not directly impact ours by making characters disappear or whatever.
(Also, predestination is highly unlikely to exist in WoW anyway, for obvious reasons related to immersion and player agency & involvement, hence why that “one true timeline” crap never made any sense to begin with)
Or, the reason why we musn’t meddle with the past is that we must protect the temporal purity of our timeline because interferences would damage its temporal fabric or whatever. But then… It’s far too late for that. There’s no pretending things like Broxigar, the Infinite’s incursions and the AU Mag’har didn’t happen. That’s also why this whole “don’t meddle with the timeways” stuff is ridiculous and no one can decently be expected to take it seriously and consider it an actual threat.
Where the, ‘True Timeline,’ is concerned, I believe it’s not a matter or predetermination, but rather that the, ‘True Timeline,’ is the only timeline where existence doesn’t end via external threat. Specifically I believe this used to be the Void consuming everything. Most of the cosmic forces do envision a specific timeline, usually one that favors them. They also often have incomplete pictures because of this.
Take Xe’ra as an example. She knew Turalyon and Alleria would find Argus, and escape to inform the Army of the Light where it was. She did not see how they would escape (it was Alleria using void magic).
It not that we care about all timelines. We care about our timeline. From literally every other example about meddling with time in other franchises, it’s bad to have your history tampered with.
The Bronze Dragonflight have a general rule that the past must not be meddled with, however there are exceptions. In the case of Brox, that was one exception, as the arrival of Brox, Krasus and Rhonin changed events during the conflict. However, Brox’s sacrifice ultimately set the timeline back on the correct path with Sargeras’s attempt to invade Azeroth through the Well of Eternity failing. As a result the Bronze Dragonflight, specifically Nozdormu, allowed not only the change to the past, but also allowed Rhonin and Krasus to take the Axe of Cenarius with them back to the present.
The Infinite Incursions are prevented by us with the aid of the Bronze Dragonflight to ensure that the timeline is not messed with. That’s literally the entire point of those dungeons in the Caverns of Time. To go back to where they’re meddling and stop them so the past doesn’t get changed.
And as for WoD, fairly sure the Bronze Dragonflight of our timeline only care about our timeline, and not other alternate realities, although they do know of them. The linking of the timelines in WoD was something that could not be undone, not without going back in time and meddling, which the Bronze Dragonflight do not approve of.
