Nathanos just mistaken her order. She just saw nomi on a boat near teldrassil. The order was to burn nomi. But she was kinda surprised to see āitā so the order was not that clear.
The rest are just PR spin the forsaken PR team came up that that was her plan all along.

My GoT inspired reasons:
Sylvanas thought there was a Dragon egg in the middle, and hoped the Dragon would call her mommy when it hatched.
Or
Sylvanasās mother always wanted a tree. Her mother died after going nuts and winning a tree. So Sylvanas burned the tree, as it represented everything that led her mother astray.
It was infested with Elvesā¦ similar to bed bugs, but worse!!! MUCH MUCH worse!!!
