Imo, locks, rogues, dks if you like dps
Paladins dks if u like tanks
Paladins druids if you like heals or do anything well

As far as fun tanking nothing beats prot war if you ask me. Unfortunately many people view them as maybe the worst tank as far as strength.
First decide on role then the rest should flow from that.
IMO these are the most fun and sufficiently powerful classes throughout WoTLK for their specific roles:
Pure Melee DPS - Mutilate Rogue
Pure Caster DPS - Affliction Warlock
Hybrid Melee DPS - DK (Frost)
Hybrid Caster DPS - Balance Druid
Tank - Blood DK
Healing - Disc Priest
It’s subjective, so take the suggestions with a grain of salt. My selection takes into account specs that remain competitive through multiple content phases, and have interesting and engaging playstyles.
