I’ll be honest, I rolled a Mecha DK for funsies and it was pretty wild.

Most of the gear looked like hell, but watching it fight was a LOL fest.

My DK is an undead guy but I think belves have always had the better animations (until they got revamped in Legion / WoD / whatever)

now i feel like it’s a moot point because a lot of the animations are now class based instead of race based.

Now I think it’s a matter of how transmogs look, and I wouldn’t pick night elves because their shoulders are honkers to the point where it gets silly. I think Undead / Belfs have the best shoulder-to-headsize ratio.
