Usually i always use some engineering mount. usually the gyrocopter that i crafted or the sky golem. though recently i got a soft spot for the xiwyllag atv. Feel both fancy and such a piece of junk it just make it peak goblin tech.
Not a mount collector but currently I use the Slime Serpent which is the secret mount from Plaguefall. The mount I probably have sported the most is my career is the Winterspring Frostsaber. I’ve always preferred the tiger mounts over the horses in vanilla and this one in particular required grinding Winterspring rep hard core way back in the day for me.
I’m a sucker for using mounts that fit mogs and also the toons theme/class, as well as being baised towards horse/equine mounts xD.
I also have a bajillion alts/toons.
It’s totally different for each toon, but this toon which is my main uses the newer midnight mount, blanchy, court sinrunner and the cindermane charger (in flying zones) 
red flying cloud, especially on my alts doing those ‘calligraphy’ & ‘like the wind’ world quests
depends on my transmog tbh 
probably my grand expedition yak since i change clothes frequently

BFA: G.M.O.D, Hati (the only Hunter pet that is mountable), Bee Mount, Priestess’ Moonsaber, Crimson Tidestallion (Nazjatar’s seahorse)
Legion: Arcanist Manasaber, Llothien Prowler (Fox), Smoldering Ember Wyrm (Karazhan mount)

I kick the AH off the mount go afk and come back to plenty of attention.

White Hawkstrider or Armored Wyvern
Hawkstrider cuz favorite, Wyvern cause favorite smoll flying mount that doesnt take up my screen and can fit through mostly all doors.
Ratstallion.
I do a combination of kind of rare but matches my transmog. I have a lot of alts so I can use a wide variety of mounts. Tovi uses Invincible. When I was finally able to see this mount, I realized that it matches my mog perfectly. Plus, you know, ultimate DK mount and all that. Here’s some other examples:
My fire Mage uses Pureblood Fire Hawk and Flametalon of Alysrazor.
Main uses Green Primal Raptor and Emerald Drake.
Paladin uses the Primal Flamesaber and Spawn of Galakras.
Shaman rides Amani War Bear and Clutch of Ji-Kun
My Monk uses Ban-Lu and my other Hunter uses the Grove Warden.
Obsidian Worldbreaker. Coolest mount in the game for sure

Arcanists Manasaber. Because of the flavor, the look and the fact it was from the last great grind that I’ve actually enjoyed and it essentially commemorates Legion for me as it was probably my favorite expansion to come out in the last decade.

I use a war wolf that has matching barding to my outfit, or Yu’lei, Daughter of Jade.
I use Lifebinder’s Handmaiden for most of my other toons, unless they have a mount that matches their flavor/transmog.
