Hmm, I’d have to say one’s with intriguing lore elements & great class-identity interweaved with their race. For that, most of Blood Elves classes I thoroughly enjoy due to the amount of identity you can pour into them 
Other than that, I’d have to say Goblin Shaman.
Why Goblin Shaman?
I enjoy them going against the stereotype of their people, the potential of being a spiritual and/or wise shaman type. Part of the reasons why I enjoy the goblin characters Renzik and Gazlowe – Because they understand the avarice amongst their kind, disliking it and wanting to better themselves & their people. I found it to be a good nose-touch on real life with various cultures & races, when there’s a particular stereotype – Even those buried in truth with the more-or-less fairly common actions taken, but also note-worthy that that’s not a reason to heap all in the same basket - And accept the fundamental truth that each person has their unique values & personality.
That may have been unintentional writing, but I found it to be deep & intriguing nonetheless. 
My undead hunter…
I think lightforged warriors are fun. Paladin powers with Light? Nah they’re just going to hit things really hard
Orc Shaman/Warlock/Hunter/Warrior/Mage.
Warriors in wow are funny in general. Everyone and their mom is using magic even rogues and hunter and warriors is just like UNGA BUNGA GO!
If we’re talking race/class of anything, the only thing that could ever get me to race change this NE would be Pandaren druids.

Murloc anything. Of the existing races and combos, Undead Warlock. Wishful combos of existing races, Mechagnome Druids complete with mechanical forms.

Blood Elf Warlock but soon it will be dualed with Lightforged Draenei Warlock because I love the concept of being a holy based Warlock.
