As unholy probably 630+ would be good. I was dragging my unholy dk and ret pally guildies through 11s with heal brann and unless they stood in the obvious bad they never really had problems at 620.
Keep your dps cooldowns rolling, remember your defensives and interrupt the scary stuff, should be fine unless your fighting one of those unavoidable damage bosses like the cryptlord’s channel.
I started doing T11 delves at 634 ilvl (equipped) on my main; this character started at 630. It took 24 min to clear the first one; others around that same time more/less. In comparison I can clear a T8 on both toons in 8-12 min. To me that added time was worth it for the 7 Gilded Crests per Bountiful T11 (up to 3 per week). If you have a map you get another 10 Crests and a Hero-track gear piece.
The value for the time-spent is a personal threshold, assuming you can complete a T11 with at least 1 life remaining. If you can’t finish in a “reasonable” amount of time, it’s obviously not worth the timek/effort.

Ultimately it’ll come down to getting in there and finding out, but nothing wrong in asking the community what they think, that’s what GD is here for after all.
Do you have an ilvl number in mind that you think is wildly different than those suggested?
I just started doing delves this season, having an easy time with Disc Priest. Setting Bran to tank and atonement is healing him while I DPS my rump roast off.
620s+ is doable without many problems in most delves as tank or healer. It’s easy to get to 630+ ilvl fairly quickly now in a week or two of delves and weekly quests if you don’t get super unlucky with slots. Even outside of bountiful keys you can get warbound 626 gear in delves (though it’s entirely random and doesn’t necessarily match your class and spec).
There are certain things that seem to do health % based damage and there are two cheat death curios, but you can be one shot in higher level delves if you’re in them on a lower ilvl character.
Pacifist Rig is probably the highest DPS curio now and also comes with a cheat death mechanic.
Well, I can tell you what a dishonest answer is. One that gives a drastically lower Item level in a pitiful attempt at shaming people that are failing at that item level. These boards are plagues with those people.
But the answer IS variable. It depends on your tolerance for dealing with mechanics, kiting, doing creative things like abusing Z axis, waiting for cooldowns between pulls, selecting specific delves that are best suited to your character, etc., etc.
If you are looking for the easiest run through delves, there are official ilvl recommendations, so it’s reasonable to assume that’s not what is being asked (though I can’t say I trust those recommendations at all)
That said, DKs are quite good at delves and 633 is totally fine for T11s as UH.
