More low-fantasy swords and armor. I really want them to update the Scottish claymore models that vanilla had. Swords like Excaliboar (still a great pun).
Less void stuff. Less fel stuff. Especially mounts, these two are hugely overrepresented.

I would like at least some transmog were Blizz remembers Vulpera exist. Hate how the large ears on my Vulpera toons clip through the helm pieces.
More low fantasy Knightly mogs like the Castle Natharia set. I don’t want to look like a super hero.
I want to look like a warcraft 1-3 or a medieval Knight.
I’d like to see more variations (not just recolors) of different transmog. The new set that was just released on the store is a good example, with multiple leg/chest/shoulder pieces that are clearly the same base model, but have different levels of coverage and busyness.
I forget the name of the other set released on the store that did the same, the red/black phoenix themed set. There was a model both for pants and for shorts, as well as multiple chest pieces with/without arm coverage and different cutouts.
Simple variations like these offer better variety than just recolors, without requiring blizzard to make a whole new model from scratch.
I’d love a simple, round shield that isn’t the Draconian Deflector (although I’d love a remodel of that one, too) - something similar to a hoplite shield.
It would also be really cool if some shields could be made that would display a coat of arms - either a guild symbol or a personal tabard symbol (remember those?). This should be doable, but it would probably mean making a minimum of 3 versions of each shield (one for the guild symbol, one for the personal symbol, and a ‘base’ version with no symbol for those that don’t want it), which might be asking for a lot.

Real robes like we see in some of the official artwork. Like there is no good hooded wizard robe that does not look like a stupid dress. They should be separate from pants

I’d like to see more Sin’dorei themed transmog, which most likely we will show up in Midnight, but still I ask. My alternative would be more western, gunslinger themed gear. More trench coats, hats that show hair. Also, better back pieces. Too many cloaks just look terrible and honestly need updating. Add some fabric transparency.
Nah I know those exist, but there’s way more animal themed druid sets and not enough nature themed and moon/celestial themed for resto or balance.
Themes for Hunters that make them look like… IDK… Hunters? Traditionally they have had the worst tier sets for a long time.
I’d also like to see Lineage 2 Dark Elf stuff 
I want more skulls, non stop skulls of all kinds, but that’s not a theme
