Said another way, why are the elves “elves” and not some other species? Do they have anything in common? What do all elves have that Orcs and Dwarves don’t?

Blood Elves, High Elves, and Void Elves are literally the same race with political divisions.
Night Elves and Nightborn are literally the same race.
Both flavors of elf came from Trolls as others have already said.

A common ancestor.
We all evolved from Trolls. Genetically, all the Elves are similar, we just change appearance based on surroundings.
Blood Elves are Night Elves that got too much sun. Nightborne are Night Elves that got too little sun. Void Elves are Night Elves that got bored.
The reason Trolls aren’t cosidered Elves is because the evolution from Troll → Elf was drastic due to DNA altering from Well of Eternity.
And this, which is pretty consistent with our Troll ancestors.
