No you are not gimping yourself. The World First KT kill had a UD priest in it.
I mean you can be Undead on a Raptor… And it might even look better. Trolls are huge and make the Raptors look smaller.

WotF also removes charm and sleep effects, which you are guaranteed to encounter in pve. Not every fight is a raid boss. Lots of other things put you to sleep and MC you.
Undead also have BiS casting animations, it cannot be denied. Trolls look bad in gear. Trolls have bad hair and faces. I could go on.
For horde pve, neither troll nor undead matters.
Berserking is perhaps the most over-rated racial in all of vanilla. It isnt remotely as good as it is in retail.

No. Berserking is not huge. The reason most people consider Troll is for Shadowguard proccing blackout for Shadow PVP.
Undead is more than fine.
Berserking can be quite nice if you use a rune to intentionally drop some hp in pve.
Of course WOTF comes in handy sometimes in PVE too. Undead vs Troll is a PVP choice mainly.

Wotf is good but only works on 3 classes.
DP is trash tier, costs 900 Mana for a dot that is weak and is dispelled by any pally or priest and any dwarf.
Trolls get hex of weakness which is a 20% healing debuff that can’t be cleansed by pally or priest and reducers all healing by 20%
Shadowguard can proc blackout on any class and stun them, it even PROCS on casters as their nukes proc blackout with shadowguard.
If you looked at the racials as a whole you can clearly see that troll priest for PvP has superior racials by a decent margin as their racials counter many more situations.
Also bezerking is solid for when you need to chain cast.
This mythic of how strong undead is dated from back in the day when we were all bad, trolls have a much more spread of who they are good VS.
Troll is the bis horde priest, but undead have better casting animations.

The reason I’m rolling a troll spriest is because shadowguard procs blackout/shadow weaving and also heals with VE while dealing substantial damage for low mana. Also demonic rune + berserking is great for burst heals or mana burns. Lastly since trolls don’t have DP we can be flexible with IF for a free MB or heal crit.
That being said you can’t go wrong with undead. In the end you are going to look at this character for 1k+ hours so pick something you like.

Undead every time
it will make zero difference in pve even if you are looking for one. wotf on a few boss fights will be handy i guess.
for pvp it depends the situation. stunning a rogue who jumps you is fun. cannibalizing is also fun. (oh yeah and that wotf does actually help)
and actually, in some situations the underwater racial is a life saver.

For future reference, you need 75 Fishing to catch Deviate Fish in The Barrens and 85 cooking to learn the Savory Deviate Delight recipe.
As a bonus if you roll Female you can use Savory Deviate Delight to be a Female Human, or you can pop Noggenfogger to turn into a skeleton and then chomp a Savory Deviate Delight and be a Human Male.
shadowgard and hex of weakness anre pretty good, so would be best for pvp

undead has wotf wich is nice, and UD looks great as shadow , DP is ok but not great

There are also plenty of ways to manually control your hp loss for Beserking.
