They aren’t supposed to irrevocably win any encounter with a caster class. Advantage, yes, flat win every single time, no. That just means that the class isn’t balanced and they can steamroll anyone that isn’t a paladin.
Also, they aren’t just op against casters. They’re OP against rogues, heal specs, and warriors. The only viable counter to an unholy death knight is a paladin.
