You can play any gender, binary, non-binary and everything in between. No one is telling you or forcing you to go along with anything.

“Gender” is a social construct much like religion. The two dont even need to mix yet you saying religion set the genders, whenever multiple societies that had either multiple religions or no set in stone religion identified multiple “genders”
sex is an entire other bag of worms which i think is what you meant but even those tend to ignore intersexed individuals (those born with a mix of both, or lack there of) though there are a few whom address them
