You want to play on a busy, active server, you deal with busy server problems.
There are SEVERAL starting zones in the game. Try Mulgore. Try an ally starting zone.

As expacs tack on…old stuff holds value. the sellers know what maybe are doing.
Leveling old craftings. Even retail had this issue, and you didn’t need to level old crap to learn new one. You’d pay out the butt for wrath ore to make a few nice mogs from say smithing lol. Or…go mine that yourself lol.
Now, there can be a slight chance of pre release price bubble bursts as some dump old stocks before mop. they will cut the price to not have 100’s of materials rotting in MoP. Ye old bag/bank clean out parties. Maybe you get some deals there.
I’m still not sure what OP is getting at. You’re saying that herbs are expensive on AH, but also not worth your time farming (even with no competition) so it sounds like the AH listing price should be higher to motivate people to farm?
Why do you expect others to farm it for cheaper if you yourself don’t think it’s worth the time?
The price issue is not a about population it’s about the value of player time vs. buying a token.

Legit. How do you walk, talk, and function if it takes you 3-4 minutes to find a single node in a zone with literally thousands of spawns.
