I will absolutely agree with you on this. This is a huge problem based on WoW’s overall homogenized class system where little build variation is allowed and absolutely no consideration is given to how certain races might uniquely utilize the capabilities of certain classes.
Like, if there was some way a High Elf Paladin looked and acted differently compared to a Blood Elf Paladin, you’d solve much of the controversy right there. Sadly, WoW’s gameplay systems don’t allow for this, and thus we have to work with what we have to hash out some kind of cultural identity. Swapping out some classes for other classes to create a unique class list is basically all we can do.
But yes, ideally I would have liked to see classes behave differently based on what race used them.
Gameplay limitations are problematic, the best solution i can think of are racial glyphs: Night Elf Priets could opt to have moonlight visual effects on their spells instead of Light effects, the gameplay would be the same, but with different visuals. Blood Elf Paladins could opt for blood effects on their spells, who knows.
A RTS like Warcraft III have way less limitations on this. Priestess of Elune in lore are skilled archers at the same time that they have access to Elune powers, imagine this in game with a Night Elf Priest with Hunter, Druid and Priest abilities all in one
Off-topic but because you mentioned WCIII I just want to say I’m super interested to see how WCIII Reforged deals with the model differences between blood elves and high elves, if indeed they make any distinctions between the models at all.
They might made, Priest and Sorcerer have different looks in Reign of Chaos and in Frozen Throne, but you can change those in the World Editor. It would be neat if they made the Blood Elves with non glowing eyes after losing the sunwell until the completion of the Second Campaign where lllidan teaches them how to use fel, so they appear with green eyes in the Third Campaign against Arthas.
Yes High Elves still exist with the Alliance, and have since the Beginning of the Warcraft Franchise. That is a well known fact, and I won’t say that some of the High Elves didn’t stay with the Alliance.
Still Blood Elves were introduced as Quel’dorei That left the Alliance and took on the moniker of Blood Elves to honor their fallen kin, at the command of their King. Also according to lore Kael’thas rounded up all the remaining High Elves. It doesn’t say Kael’thas only rounded up the High Elves of Quel’thalas. 90% of all surviving High Elves became the Blood Elves. So yes According to canon High Elves did become Blood Elves. Did some remain High Elves, and stay with the Alliance? Yes! But that doesn’t change the fact that One of the major story points in Blood Elf Culture is that they are the High Elves that became the Blood Elves to Honor their Fallen. Given the Alliance High Elves would take away from that in my opinion. Does this mean that Alliances player shouldn’t have High Elves? No! It just means that I believe it will harm the Blood Elf Story.
A key point here is that it wasn’t just a name change, because their society and physical appereance also changed, they took a very different path from the Alliance Quel’dorei in the last 20 years and it became a key factor in separing the two groups.
They are not going to be given because they already are in the Alliance, and all the events after Warcraft III demonstrated that. The story already moved forward from Warcraft III (not in a sense that the WoW story is better that the Warcraft III story, but rather than a lot of things happened since)

The majority of High Elves didn’t become Blood Elves. The majority of High Elves died.
It wasn’t “some” High Elves that stayed on the Alliance. From what we can see, the High Elves on Alliance settlements never changed their name.
How does the Alliance getting playable High Elves harm the Blood Elf story? High Elves are already part of the Alliance. If there was any harm to be done, it would already be here.

The Silver Covenant is not and will never be neutral. They are staunch members of the Alliance and have been so forever.
There is no reason to take Paladin and Warrior away from High Elves.
High Elf warriors are not Spellbreakers. High Elf paladins are not Blood Knights. Both of these already exist
The only classes High Elf could logically be barred from are Warlock, Shaman, Druid and the Hero Classes. And of the former three, Shaman or Druid could instead be added to High Elf to further differentiate them from Blood Elves, without taking anything away from the race.
