I am flying around looking for skinnable targets. Why isn’t there a way to track skinnable targets? Just like Herbalism and Mining?. There really needs a way to track skinnable targets for Skinners.

The clutter would be absolutely immense in a lot of cases. You’re meant to use your eyes and some inferencing in order to determine what is a general skinning target, and then for more recent-expansion skinning there is the separate tracking for High-Value targets that award additional reagents for skinning them (via guaranteed Finesse, I believe).
For some mobs, it’s not always obvious, but in general looking at whether something is a beast and appears to have hide or scales is the way to start. Many abberations in fel- or void-affiliated areas that have visual appearances resembling beasts are also skinnable.
