The only AU’s I know of that involves Arthas are the one where Blackmoore succeeds in his plan on using the Orcs to take over Lordaeron. Arthas and Jaina, whom are married in this timeline flee to Stormwind. This is detailed in Thrall: Twilight of the Aspects novel. The other is where the Alliance managed to defeat the Scourge (and thus Arthas) at Dalaran, but soon fell apart over how to deal with the fleeing Orcs. This is the “Warlands” AU we see during Dragonflights Time Rift event.
