Almost all the prof are pretty equal besides eng.
Scribe is like 80 attack power over the other shoulder enchant or 47 spell power.
And darkroom decks! Not exclusive to them but they make the cards.

They’re close, at least… Hence my comment about min maxers over blowing the differential… People act like JC having 4 total more attack power is world ending
That being said, it also depends on classes… Ret and DK for example, have talents that boost str by %, kings buff scales with main stats -not attack power, DK also has fallen crusader runeforge which procs a %based str increase. Sub Rogue and Survival have agi scaling talents… and a number of physical dps by icc tier want to swap to Armor Pen.

I dont think professions are going to stop people completing content, (it might drop people to 90+ parses instead of higher though).
That being said if your doing everything to can to optimise your parse you will definitely be looking for the best 2 professions number wise.
