The issue is that despite the desire on the part of Blizzard and certain segments of the community to standardize gameplay and remove options, one size does not fit all. Players have different skills and preferences. They like having options. They find different things to be challenging and/or entertaining. Some are not looking for a major challenge at all. This is especially true for leveling, where Blizzard has been monkeying with leveling since Legion, moving from one One True Way of Leveling™ to the next One True Way of Leveling™.
You can find how many copies of the expansions sell. That should really tell you all you need to know.

SE does release how many registered accounts, you can infer how many players they gain between the release of that data. Might be harder to judge WoW’s, but there’s a few YT videos showing the metrics and estimating player counts if you want to watch them.
There is absolutely data that people get through investor discussions that’s used to infer player count.
