I was using elvUI during the last stress test and it was working for the most part. Granted there is a lot of the features they are still working on and it may not be fully implemented for a while, but overall should be good enough to use.
I didn’t care for some of the other choices because they didn’t offer a cast bar replacement like elvUI does, but the features that work currently are pretty nice!

Yeah there are still some weird quirks that were pretty hard to track down in beta, we’re all gonna be working quite a bit post launch to clean everything up though, shouldn’t take too long to figure out with the others helping out
Shadowed UF is my grail. I’ve had other UF mods, but that is the one I love and have used for years.
Using ZPerl or Pibull until Shadowed is available
It’s pretty simple and yes, the HUD type addons show the same information. It’s a purely aesthetic consideration for me. I’ve tried the others and just did not like them as well. All it does is displays a movable bar group showing health, mana, energy, combo points, etc. I’m sure what you found on Curse is what I’m referring to. You would have my gratitude if you were able to get it functional for classic but I understand that I’m probably the only person that is asking for it or would use it.
