I do trust everything you make even if you over cook everything! And I love your precaution. Beef is the only dish I feel safe undercooking. Ever. Pork, Seafood and chicken must be cooked to temp. Pork I miiiight slide on at 142 instead of 145.

Ehh… It all depends on you using american cheese in proper amounts and at what it is good at like anything else when cooking. Which in this case is it’s amazing ability at melting consistently, being creamy and there being no separation of the milk fats and whatnot. Everything has it’s place and american’s just isnt in anything that is served cold.

Just… make sure to avoid the ones labeled ‘Pasteurized Process American Slices’ because they aren’t actually cheese and instead tend to be oil based and not use cheese at all. I would suggest the ones with the label of ‘Pasteurized Process Cheese’ and where I live you can usually get those in the deli.
