I know you wanted an EST server but my PvP server is PST and are very active in the evening. Our Raids are 6PST which is 9EST. We even have a late night raid (3 raids) that goes from 10pm -1am PST (which is 12am-3am). Check out the thread and let me know if you’re interested. Btw we have a very active Discord.
