Grand Expedition Yak for vendor and transmog. Never really travel on it though, apart from a quirky expedition up Mount Neverest. Walked the last part, obvs.
Razorwings. Got them all. Great for air and land, small, agile and neat for zipping about. My Warlock made a pet project of these in Korthia. Soaring Razorwing is my favourite. (I think they share skeleton and animations with the Wolfhawks but only my Hunter can use those of course).
Grand Drakes. Waited long enough and worked for them. Twilight Harbinger is my favourite, with Life Binders Handmaiden a close second. They just feel and fly particularly dynamically and I love them. They are my long distance cruisers. Nice horns 
My Warlock loves her Gloomdark Nightmare, without which this Monk would not even exist, being the sole original reason I gave Remix a spin.
I’ll always have a soft spot for Ashes of Alar because it took me two years to get and I love leaving pink trails across the sky.
On this character, I always have my Red Flying Cloud on call to whistle. Monk is Irrepressible!
I used to be a complete Proto Drake addict, but these days the constant humping up and down makes me feel a little queasy.

Each of my characters have their assigned mount and a theme I try to stick to even when I change things up (except during Dragonflight obviously).
This character almost always rides hippogryphs in the sky and cats on the ground, although the specific skins have changed every few expansions. I finally found all the crystals for the Legion long-forgotten hippogryph secret/rare a couple of expansions ago and have been using it ever since.
My dwarven paladin used only his original BC gryphon until TWW when he finally upgraded to the preorder light gryphon. On the ground he uses the dwarven paladin ram (always has, always will?)
My human mage has used carpets and kites in the past but now uses the glorious fishing mount from TWW. He rides exclusively unicorn-ish ground mounts for nostalgic reasons that predate WoW.
(And so on down my long list of alts … everyone has a story)

I rely heavily on my travelers tundra mammoth for selling trash, ground mounts i like horses, but I have a mechnohog and flying I like dragons and sandstone drake, because I don’t have to worry if it’s set to haul other players.

No but seriously, usually my Armored Bloodwing (my fav in-game present i received) for flying n Amani War Bear (my most prized mount cuz i carried the hecc outta them ZA runs back in the day) for ground.
I have so many at this point that I just use whatever pops up with the favorite button. My favorite is probably still the feldrake tho.
If I could I would absolutely use the D.R.I.V.E. all over the place.
For flying, the broom, because it’s small.
For ground, I’ve been partial to the Arathi imperial lynxes lately.
Oh and I have a mammoth for selling stuff.
I’m a fan of flying horses because they can pass for a normal mount on the ground.
I hate having to pick both a flying and ground mount for a character, and I hate walking around on the ground with a winged creature even more.

I will chop and change my favourite list, never having more than like 6 at a time, but I always have my archaeology scarab mount for when I am in a ground mount only zone, a mount that has always been on my favourite list since I got it way back in like Shadowlands or whenever.
And ever since I brought the Grinning Reaver back in like BFA or something (Just before they removed it from the store)I have also had that on my favourite list for my main used flying mount.
Otherwise I might add seasonal mounts to my favourites, like how I added the Turbulent Timeways V mount recently since I cheesed it and should not have it yet, which I will remove when more people get it, gets people’s attention doing that.
This guy rides a ZG tiger. Soundless for flying mount.
My green-dragon Dracthyr rides ZG tiger. (Old Sunken Temple is my favorite dungeon in the entire game.) Nobelgarden carpet for flying mount.
Goblin Shaman rides the Geargrinder Mk 11, and the Electric Eel PvP mount.
Undead Monk rides the original non-epic Brewfest Ram. Nerubian PvP mount for his flyer.
All of my characters ride mounts, have mogs, and pets that “fit” their class and race theme.
Griffons. Have always loved them no matter where they’re found.

I use the headless horseman mount on all my characters. I got it the first time I did all hallows eve over 12 years ago and it’s still my go to mount. For dragon riding I have a white slithering drake

My yak and brutosaur mounts. They’re convenient.
But to traverse the world…any horse mount. I like horses and I like turtles.

I pick the mount that works specifically for each character.
So, my BM Hunter has the Sky Golem, my Fire Mage has his Legion Class Hall mount, and my Assassin Rogue uses the Random Mount Generator.
Generally I use my pureheart courser for most characters unless I’m doing some kind of theme
Mage tower book and draconic glad mount
