IRL food for classic

Pasta or rice is really quick and easy. If you like hunny-oat cereal, that’s another good one. Trail mix is good as a snack.

Since you have a few days… make a batch of enchilada’s and lasagna … portion / freeze and you have good food for days, unless you are like me living with teens then I make 2 pans of either and they eat them all.

Casseroles are good for a few meals, stick to the ribs, and are fairly easy to make. You will need a Pyrex baking dish which are usually sold at the grocery store.

Ingredients (substitute for your own taste)
Chicken thighs (or can use those roast whole chickens, pick the bones clean from leftovers type thing, add the meat to this)
1 cup cooked rice (can be the microwave bags)
Frozen corn, peas, or green beans
1 can cream of broccoli (or celery, mushroom whichever you prefer also use 2 cans if you have the big size Pyrex 10"x15" ones)
Ritz type crackers crumbled up (or panko or bread crumbs)
Shredded cheese
Butter

If you’ve got raw chicken season to taste and roast that at 450 till the fat is reduced out of the meat (like 30 mins). Meat will be kinda shriveled but since it is dark meat still nice and juicy. Shred the meat with a fork. Don’t put all the grease from roasting the chicken into your casserole. Clean out or use another pyrex.

Cook the rice. 1 cup rice into pot of 1 3/4 cup boiling water. Add salt.

Add the cream of soup and cooked rice together in the Pyrex. Mix together.
Add the other ingredients and mix well then make a nice top crust with more of the crumbed crackers and cheese. Put some butter on top and slam it into a 350 degree oven. Bake until the cheese is melted and casserole bubbling (like 20-30 mins or something)

You can also add things like cherry tomatoes, celery, artichoke, olives, black beans etc instead of chicken for vegetarians.

Pairs with Brightsong Wine.

Cold brew tea/coffee in the fridge. Keep a waterbottle or two nearby.
Cut up carrots and other vegetables, enjoy plan or with hummus/ranch/guac.
Meal prep something for a dinner or two, I’ll be making Chicken Picatta with rice pilaf and roasted broccoli Monday morning. Rice can then become fried rice the next day.
Prevent Cheetos fingers! Use chop sticks to keep your mouse/keyboard clean.
