It’s completely standard in statistical analysis to use numbers so that you can take measurements of different variables. If you want to compare males to females for example, you would code one of them as 1 and one as 0 so the data could actually be measured.
It isn’t inherently sexist nor racist. It’s literally just a standard practice.
The purpose of the chart is so they can literally go:
