What makes you believe there will be such a mutation that it will cause another pandemic? There’s no evidence it will and if it does, it will be like the Flu, with varying strains and hope your vaccine is for the right strain that year.
Even if it does mutate, your immune system is more likely to handle it better than it would without it.

Respiratory viruses like coronaviruses and the flu regularly need new vaccines developed because they develop resistances. And those vaccines are not 100% effective. In a good year they will be 85% effective and that is if they guess correctly on the strains.
Again, the protein structure of COVID-19 makes it impossible for mutation to occur that would not also render it neutral. Please read more about how this works from like a science journal and not fox news.
