I am currently contemplating life while I work on my “chorizo mac n’ cheese” experiment for dinner and get ready to go to my adequate, but unfulfilling job tomorrow that can only be a punishment for the bad choices I have made in life.

Well, the “Chorizo Mac N’ Cheese” came out pretty great, so if any wants to make it the way I did, here is my recipe (I am not a professional recipe writer):

Ingredients:

1lb package of Mexican spicy chorizo (I used beef chorizo, but you can use pork or even Soyrizo depending on your preference)

1/2 large white onion, diced (about 1/4")

1 16oz jar / can / package of cheese sauce (I used Ragu because it was on sale)

3/4lb of pasta or macaroni

Directions:

In a frying pan (with high sides), cook the chorizo with the onions on medium-high heat until most of the liquid is cooked out (chorizo fully cooked, onions cooked and chorizo oil). Make sure you stir it once in a while so it does not stick to the bottom of the pan and burn.

While the chorizo is cooking, boil the pasta following the directions on the package, except cook it about 1 or 2 minutes less than the minimum recommended time (so it is more al dente and does not fall apart) and then drain the pasta.

Reduce the heat for the chorizo to medium-low and then slowly stir in the cheese sauce (so the oil does not splash all over and burn you).

Slowly stir the drained pasta into the chorizo / cheese sauce mix until the sauce evenly coats all the pasta.

Remove from the heat and let it cool a bit, then serve (in a bow or on a plate, whatever).

Options:

I put some Siracha on top (because Siracha is awesome and goes well on any savory food), but you could use salsa or taco sauce or sliced jalapeños, or shredded cheese.

I am sure this has been made similarly by other people but it is fairly easy and inexpensive and good.
