It’s looking like they are showing the strong Blood Elf themes from the get go rather than adding them slowly as time goes on in a more lore friendly way
Also there is no hair color customization for units in War3 so beyond Blonde or White we are not gonna see a lot of variety.
But we can assume that Blood Elves and High Elves share hair colors, save for, let’s say, a hair color only existing on a particular family/close knit group that mostly ended up on either side; we don’t have HE npc’s with all the Blood Elf colors, and the light blue that we only see on BE DK’s is used for HE npc’s AFAIK.
So a small hair color exclusivity is possible, I guess.
But friend Murgatroyd we don’t want to suggest one of our friends’ inclusion is predicated on their supplying us of alcohol. Our friends are welcome whether they drink or not, because we love them so much.
I zoomed in close in photoshop on Anasterian, and they seemed brown, though there is no pupil so maybe there is meant to be a glow.

You have to figure the distance we will be viewing the units from the Playing perspective we won’t really be able to tell. I agree the portrait will be best representation.
I am curious as to why some people even on the Warcraft 3 forums are okay with retcons of the High and Blood elves to have green and gold eyes pre-scourge invasion.
Maybe it’s a prelude to giving blood elves Blue-Eyes.
It’s one possibility I thought: maybe Blizzard just doesn’t care unless the character will be used in close-up in some cutscene.
Another possibility is that models shared between RoC and TFT (priest, sorceress, dragonhwak rider) have two skins in the same model, but Wowhead previews only one of them. (Still doesn’t explain the NPC high elf models, but maybe even peasants and civilians may have two skins?)

Even if the models have Golden Eyes (and the Villager Green ones) their portraits have blue eyes.
My theory is that they simply are using yellow eyes because they are neither, so an unit could work for both? Still doesn’t make sense for the Anasterian unique model to be this?
